Organic Jackfruit over Zucchini Noodles: A Plant-Based Delight

Sometimes, accidental purchases lead to the most inspired recipes! During a recent trip to Trader Joe’s, I mistakenly grabbed a bag of zucchini noodles. Rather than returning them, I decided to get creative and craft a nutritious noodle dinner featuring jackfruit as the star.

Unripe jackfruit is a phenomenal plant-based meat substitute, perfect for curries, stir-fries, and wraps. Beyond its versatile texture, it is known to help maintain healthy cholesterol, reduce blood pressure, and regulate blood sugar. When paired with zucchini—a vegetable celebrated for supporting thyroid and adrenal function—you have a powerhouse meal.

Zucchini & BBQ Jackfruit Stir-Fry
  • 1 bag of BBQ Jackfruit (Try the pre-seasoned options from The Jackfruit Company)
  • 1 cup of Zucchini Noodles
  • ½ cup of Fresh Spinach, chopped
  • ½ cup of Organic Frozen Corn
  • Seasonings: A blend of cayenne pepper, turmeric, vegetable seasoning, and sage.

Instructions:
Simply sauté the jackfruit and vegetables in a pan until tender, tossing in your herbs and spices to taste. It’s a fast, flavorful, and guilt-free dinner!
