Sometimes, accidental purchases make the best recipes. During one of my weekly Trader Joe's, without notice, i grabbed a bag of zucchini noodles. Instead of returning the bad of zucchini, I decided to cook a noodle dinner with jackfruit instead.
Unripe jackfruit is used as a meat substitute in curries, stir-fries, sandwich wraps, and more. Jackfruit is great for maintaining cholesterol, educing blood pressure, regulating blood sugar, and assist in wound healing. Zucchini is a delicious vegetable that Improves thyroid and adrenal functions. Check out my zucchini and jackfruit recipe below:
1. Use 1 bag of BBQ Jackfruit
2. Cut half a cup of Spinach
3. Mix organic frozen corn
4. Place a cup of zucchini noodles into the pot
